The mint julep has survived 200 years of cocktail fashion because it gets the fundamentals right: bourbon, sugar, mint, ice. When Churchill Downs pours 120,000 of them across Derby weekend, the version in the cup is barely more complicated than what Henry Clay was drinking in the 1820s. That restraint is the point.
This is a drink that rewards attention to small choices. Which bourbon you pour matters. How you treat the mint matters. The ice matters more than almost any other variable.

The Kentucky Derby has served the julep as its signature drink since 1938. The recipe hasn't changed because it doesn't need to.
The Four Ingredients
- Bourbon. 2.5 ounces. Nothing wheated, nothing finished, nothing over 100 proof. The drink isn't the place to show off a rare bottle.
- Mint. A sprig for muddling, another for garnish. Spearmint, not peppermint.
- Simple syrup. Half an ounce of 1:1 sugar and water. Some purists use superfine sugar dissolved in the bourbon.
- Crushed ice. Not cubed. Not "pebble" ice from a nugget machine. Crushed.
The Technique
Gently press 4-5 mint leaves against the bottom of the cup to release oil, not to shred the leaves. Add syrup and bourbon. Fill to the top with crushed ice. Stir until the cup frosts on the outside. Top with more crushed ice to form a dome, tuck in a fresh mint bouquet, and serve with a short straw cut so the drinker's nose rests on the mint.
Why the Cup Matters
A silver or pewter julep cup isn't affectation. Metal frosts faster and stays colder than glass, which is the entire point of the ice dome. A chilled Collins glass works. A room-temperature highball ruins the drink.
Why Bourbon Choice Matters Here
Juleps hide almost nothing. The bourbon carries the drink. A 90-proof Kentucky straight with a rye-forward mash bill gives the classic julep its structure: the rye provides enough backbone to push through the mint oil and dilution, while the proof stays approachable across a three-hour party.
A wheated bourbon produces a softer, sweeter julep. A cask strength bottle overpowers the mint. A heavily finished whiskey muddies the drink.

The classic is the baseline. Once you know it cold, the variations get interesting.
The Smoked Julep
A few drops of smoked simple syrup (made with smoked sugar or a brief cold smoke over the finished syrup) adds a peat-adjacent note that turns a bourbon julep into something closer to a mezcal julep without changing the spirit. Best with a rye-heavy bourbon that can carry the smoke.
The Stone Fruit Julep
Muddle a single slice of ripe peach or apricot with the mint. The fruit's acidity cuts the sugar and lengthens the drink. This version calls for a softer wheated bourbon, the wheat amplifies the stone fruit without fighting it.
The Barrel-Finished Julep
A bourbon finished in sherry or port casks brings a different julep entirely. Dark fruit and oak replace some of the mint forward character. Use slightly less syrup because the finished bourbon already carries residual sweetness.
The High-Proof Julep
Barrel proof bourbons over 115 proof need more ice and a longer stir. The drink should dilute to roughly 90 proof effective ABV after the stir. Done right, a high-proof julep drinks like a classic with more layered aromatics on the finish.
What Won't Work
Skip the muddler. Skip the blender. Skip the cocktail shaker. A julep that looks like a mojito is a mojito.
Skip flavored bourbons. Skip cream liqueurs. The classic doesn't need help.
Pairing the Julep With Derby Food
The julep is sweet, mint-forward, and boozy. It wants salt and fat to balance it: country ham biscuits, pimento cheese, beer cheese with pretzels, or anything fried. Avoid delicate food that the mint will trample.
Derby week 2026 arrives against a backdrop of significant industry recalibration that is, paradoxically, good news for julep drinkers. A VinePair analysis published April 21 documented what industry insiders are calling a structural bourbon glut: with 16 million barrels aging in Kentucky and consumption flat to declining, barrel prices have fallen 30 to 40% from their 2022 peak, and multiple major producers, Jim Beam at its Clermont distillery, MGP at two Kentucky facilities, and Bardstown Bourbon Company, have paused or sharply curtailed production in 2026.1 The practical effect at retail is that previously allocated bottles are appearing on shelves with greater regularity, and mid-shelf bourbons are holding or slightly softening in price. A Market Watch report from April 22 confirmed that Derby-specific brands are still the category's bright spot: Woodford Reserve and the Old Forester Ready-to-Drink Mint Julep are the two labels retailers cite as moving fastest in the days before the 152nd Run for the Roses, with under-$60 bottles driving the bulk of volume.2
On the innovation side, the week produced two releases directly relevant to the classic-versus-modern julep angle. Old Forester on April 22 debuted The Perfecta, a new Derby cocktail pairing its 86-proof bourbon with pineapple juice and ginger beer, an explicit signal from Brown-Forman that the brand is positioning itself as the modern alternative to the traditional julep it officially supplies at Churchill Downs.3 Meanwhile, Maker's Mark announced the return of Star Hill Farm Whisky 2026 on the same day, a cask-strength wheat whisky at 116.4 proof that earned World's Best Wheat Whisky honors and represents the most adventurous modern take available this Derby season.4 For context on the Four Roses side, the brand's $775 million acquisition by E. & J. Gallo Winery finalized in early April, returning the distillery to American ownership for the first time in 83 years.5
